Program Description
The Culinary & Hospitality Certificate is a 96-hour short-term workforce program (not including internship) that provides real world hands-on training over twelve weeks in partnership with the Hudson Hospitality Group. Our goal is to produce trained, work-ready employees who can find immediate employment in the local Peekskill restaurant industry post-program completion.
Course Descriptions
Your Entry to the Hospitality & Culinary Field
An overview of the history, growth, and development of the hospitality industry, including major objectives and career opportunities. This course, consisting of one-hour lectures twice per week, also serves as an introduction to topics covered in subsequent coursework.
SERV safe Food Service Sanitation & Safety
This class is mandatory for anyone who handles and/or distributes food and prepares students to take the Department of Health Food Protection Certificate exam. It also meets State Agriculture and Markets education requirements for food purveyors. A one-hour class will be given once per week for 10 weeks; test will be administered in the 11th week with a re-test scheduled for the 12th week, if needed.
Food Service Training Program
This practical application of food production lab class will run twice per week for the entire twelve weeks of the course, resulting in mastery of cooking fundamentals.
- Students will learn to properly read and execute a recipe as well as gain skills to develop their own recipes.
- Students will learn of the diverse career paths offered in the culinary industry from bakers and line cooks to nutrition positions and teaching opportunities, etc.
- Daily tastings of prepared dishes will help to hone and expand students’ palate.
Fieldwork
The program provides real world fieldwork experience through paid restaurant internships. Students will be able to obtain experience with a variety of positions throughout the twelve weeks such as but not limited to: Line Cook, Bar Back, Barista, Garde Manger, Pâtissier, Busser, Dishwasher, Host/Hostess. Internship Rate of Pay = Minimum Wage
Students may make requests for which positions they would like to the program coordinator. Internship hours will be scheduled during the weekend and hours are subject to your availability and shift availability. These shifts are coordinated through the program coordinator. Application Process

Interested students must complete the application and submit a letter of recommendation to peekskill@sunywcc.edu no later than the deadline date to be determined. Select candidates will be asked to interview for ten available slots in the spring program. Successful candidates will be granted funding for the certificate program, including a paid internship, and encouraged to apply for available scholarships to the SUNY Westchester Culinary Arts & Hospitality Management A.A.S. Program. Classes will be held at the Factoria, 5 John Walsh Blvd.
